The traditional inexpensive paella pan found all over Spain - recommended for use with gas cookers. Excellent for conducting the heat. After washing they need to be lightly oiled before storage.
A little more expensive, but with certain advantages. Ideal for use on any heat source, not just gas. Very easy to clean after use - a short soak in warm water and detergent - and no need to oil before storage.
Sizes over 8 servings are not practical for domestic cookers - you need a special burner.
