This is a refreshing salad using oranges and fresh herbs which goes well with a wide variety of meals. The picture below shows the salad presented in a 25cm cazuela circular (£5 from Paella Plus).
Ingredients (for 4-6)
Crisp lettuce or variety of lettuce leaves
Cherry tomatoes
Spring onions chopped
Fresh coriander leaves
Fresh mint
1 Spanish orange peeled and sliced.
