Spanish recipe - Pastel de Queso 'San Francisco'

This simple cheesecake recipe comes from our friend Esperanza, who currently runs the Bar Semaforo in  Santibanez de Vidriales - a small village in the province of Zamora - where she cooks superb food daily for the local workers who frequent the small dining room alongside.  Her husband Francisco thinks the recipe is named after him!

Ingredients
4oz butter
caster sugar
pkt digestive biscuits (or similar)
8oz Philadelphia cheese (or similar)
lemon
2 eggs
2 cartons sour cream
cinnamon
vanilla essence


Method
Melt 4oz butter with tsp caster sugar
Crush 15 digestive biscuits; mix with butter and sugar; line flan dish
Mix 8oz Philadelphia cheese with half cup of caster sugar
Add juice of half a lemon and 2 eggs - mix for 2 mins with electric mixer and then pour into flan dish and sprinkle with cinnamon
Bake for 20-25 minutes at 375
Leave to cool for 20 mins
Mix 2 cartons sour cream with half tsp vanilla essence and 2 tsps caster sugar
Spread over cheesecake and bake for 10 mins at 425
